Frozen Pistachio Chocolate Cookie Crumb Pie

Ingredients
For the crust:
2 ounces shelled pistachios, toasted
16 chocolate wafer cookies
1/3 cup pistachio butter*
For the filling:
4 cups vanilla ice cream, slightly softened, divided
1/2 cup pistachio butter*
2 tablespoons chocolate syrup or melted chocolate (optional)
*Use store-bought or make your own
Instructions
Place toasted pistachios and cookies in a sandwich baggie or folded parchment paper and crush to fine crumble. Pour into a medium bowl with pistachio butter and stir until well combined.
Press into a 9-inch pie pan. Carefully spoon 3 cups of ice cream on top.
In the bowl, combine remaining 1 cup of ice cream with pistachio butter and stir until just combined. Do not over stir or you will lose volume. Spoon evenly over pie. Top with chopped, toasted pistachios. Cover and freeze 4 hours or until very firm.
At time of serving, drizzle chocolate syrup or melted chocolate over top if desired.
